Gin and whiskey lovers will enjoy it.
A new place designed just for you will open in Swan Valley.
Western Australia Master Distiller Cameron Syme is traveling to this region in early June with its two biggest brands – Limeburners and Giniversity.
An exciting new project called Limeburners & Giniversity in the Valley will seat 200 people – including a restaurant, bar, cellar door and party space.
Of course, the menu will also include Giniversity and Limeburner, and in the currently tried and tested kitchen there will only be gluten-free options.
Mr. Sim bought the Carilley estate on Hyem Road, Herne Hill in late December, and is now renovating the site to mix it with his collection of whiskeys and liquors.
While the Limeburners Distillery will remain in Albany and Giniversity in Margaret River, it will be the first whiskey to be served in the region, connecting more than 40 world-class wineries, breweries, ciders and gin distilleries.
With three distilleries to his credit and over 180 awards, Mr. Simi is excited to share his high-quality products and award-winning services through his basement door, giving Swan Valley a taste of all that the Great Southern and Margaret River regions have to offer.
“I’ve been wanting to share my produce in town for a while, but we had to find the right space. The Carilley Estate was perfect and organized for work,” Sim said.
“We now have the most beautiful park and an ideal location in the valley, allowing us to build a good place where people can visit and enjoy our internationally recognized spirits and experiences.
“With properties now located in the Valley, Great Southern and Margaret River are using some of the best produce in our state to continue producing world-class gin and whiskey. We are pleased to work with our neighbors to showcase and enhance the region.”
The site is located on the Carilley Estate on Hyem Road, Herne Hill and is due to open in June of this year. Look at this space!
